Limited Availability! ORIGIN: The grapes for this limited edition Cabernet Sauvignon came from the Bennett Vineyard, which is located in the Coombsville area of Napa Valley. Nestled in the green rolling hills east of the town of Napa, at the southern end of the valley, this area is exposed to cooling bay breezes most summer afternoons, and produces Cabernet of great distinction. VINEYARD NOTES: The growing season was extended, with the weather remaining quite cool all the way through a rather late, almost leisurely harvest. The yield was quite low, making for rich flavor. The grapes were harvested by hand on September 30, 2005. WINEMAKING NOTES: The fruit was gently destemmed, leaving many uncrushed berries, and fermented in a small closed-top fermentor. The tank was pumped over twice daily, and the must was pressed at dryness. The wine was aged exclusively in French oak barrels, 50 percent of which were new, for sixteen months, and bottled on March 1, 2007. TASTING NOTES: This Cabernet displays a very dark garnet color, bordering on black, and the nose is redolent with black currant, spice, and espresso aromas. The palate is very full, with layers of blackberry jam and dark chocolate, and only the faintest hint of Cabernet’s traditional herbal character.
